Boil sugar into a slab of honeycomb

The Recipe
- Line a tin with baking paper and measure a level teaspoon of bicarbonate of soda ready to hand.
- Melt sugar and golden syrup together in a deep pan and let it boil, without stirring, until it turns deep amber.
- Take it off the heat, beat in the bicarb fast, and pour the foaming mass straight into the tin without touching it.
- Leave it to set hard, then crack it into pieces.
