The Recipe
- Go to the nearest fishmonger or oyster bar that sells them live in the shell and buy a dozen.
- Ask whoever served you to shuck one in front of you and point out where the hinge is.
- Shuck the rest yourself over a folded towel, keeping the blade pointed away from the hand holding the shell.
- Eat them as you go, the mangled ones included.
