Cook a pot of jam and jar it

The Recipe
- Buy whatever fruit is cheapest and ripest at the nearest market or shop, and roughly its own weight in sugar.
- Put a saucer in the freezer, then cook the fruit and sugar down in your biggest pan, stirring so it does not catch.
- Test the set by pushing a spoonful across the cold saucer: when it wrinkles instead of running, it is done.
- Pour it hot into clean jars, seal them, and leave them to cool where you can hear the lids pop as they seal.
