Cook a dish that takes the whole day
“For most of the day it looks like nothing is happening, and you'll want to check your phone. Then the smell changes and you understand why it takes this long.”
The Recipe
- Pick the one dish you've always thought took too long: a braise, a stock, a bread, a ragù.
- Buy every ingredient this morning, before you start, so you never have to stop halfway.
- Clear the counter and put your phone in another room.
- Start it, and set no timer you have to obey: cook by look and smell instead.
- In the long middle hours, sit in the kitchen and do nothing else while it works.
- Taste it once an hour and change one thing each time.
- Lay a real place for yourself when it's done: table set, not the counter.
- Eat it slowly, and write down the one thing you'd do differently.
