Travel to where one dish is actually from and eat it there

“Spending a whole day and a train fare on one plate of food sounds like a bad trade. Eating a thing where it was invented, made by people who make nothing else, is not the same meal at all.”

The Recipe

  1. Pick one dish with a place in its name or its story, somewhere you can reach and return from in a day.
  2. Leave in the morning by the slowest sensible transport, so getting there is part of it.
  3. Arrive hungry and eat the dish where it is from, at a plain place full of locals rather than the one that advertises.
  4. Ask whoever serves you what makes their version different from the ones elsewhere.
  5. Order whatever they say goes with it, even the drink.
  6. Walk off the meal through the town or the country the dish came out of.
  7. Buy one thing to take home that you cannot get in the city.
  8. Eat something small for the road and take the later train back.
